Melissa Rickman, founder of Wholly Stromboli and a 20-year veteran of the pizza industry, is an accomplished author, speaker and proud member of the World Pizza Champions team. Melissa has been featured in a bestselling cookbook, The Pursuit of Pizza, where she shares her recipe for The Original Stromboli, the tried and true classic she grew up with that remained unchanged over the years. But, Melissa has always dared to step outside the box and has a passion for innovation. “I love taking something that is well established, traditional and putting my own spin on it to make it even better.”
This is how the Doppio Frico was born.
Melissa’s husband, best friend and business partner, Eric, loved the idea of bringing Detroit-style pizza to Wholly Stromboli, but through Melissa’s testing of the iconic pizza style he always said, “Everyone goes for those coveted corner pieces, then the sides, and in some cases someone gets stuck with the middle pieces with no crispy edge! I wish there was a way to have two frico covered edges on every slice.” This gave Melissa the idea for the Doppio Frico. She went to work sketching out her idea for the pan, then working with the engineers and design team at LloydPans, they got busy bringing the Doppio Frico to reality.
The LloydPans team completed the first two test pans in the nick of time to arrive overnight to Parma, Italy, where the next day Melissa wowed the judges with the invention at Campionato Della Pizza Parma. The judges, some not even in her competition category, gathered around to get a glimpse of “that pizza with a hole in the center.” Her Doppio Frico pizza was even mentioned in an article in The England Financial times.
After the competition, Melissa and the LloydPans team worked together and modified the design a number of times for better performance, getting just the right angles on the sides, the right ventilation through the center and just the right dimensions to achieve that perfect Doppio Frico.

Pre Seasoned Tuff-Kote®
The pre-seasoning release surface is created by applying several coats of our liquid sealer and baking in an industrial oven. The sealer is actually absorbed into the pores of the anodized finish and only requires an initial wash before use. The result eliminates the need for messy oiling and is very durable.
