Pizza’s versatility is one of the reasons the LloydPans innovation team loves the ‘za so much. It truly is a food that provides something for everyone, and just when we thought we’d seen every innovative pizza technique or topping imaginable, pizza makers surprise us with something new. Here are some of our favorite pizza trends of late.

Orange You Glad You Tried This?
The hottest perennial ingredient/flavor for fall is pumpkin, and pumpkin spice pizza has been popping up more often on fall menus, as seen at Villa Italian Kitchen in the form of pumpkin pie filling, loaded with nutmeg, cloven and cinnamon. Add whole milk mozzarella and bake — then add more pumpkin pie dollops on top of the cheese and you have the perfect fall pizza. If the filling is a little too much for your customers, perhaps just a sprinkling will work instead. New Jersey-based Talula’s uses Neapolitan-style pizza dough and then tops it with pumpkin spice candied bacon, kabocha (squash) smoked mozzarella, ricotta and caramelized onion.

Lou Malnati’s Turns on Innovation
Popular Chicago-based chain Lou Malnati’s is known for its deep dish. But, in honor of National Pizza Month, White Pizza Meets Deep Dish — a pizza that’s traditionally made on thin crust — was introduced by popular Chicago-based chain Lou Malnati’s. It features Louie cream sauce with mushrooms, spinach mix, red onions with mozzarella cheese. Chicago 5 also notes that it’s the first time in the chain’s 50 years that Lou Malnati’s is using white sauce in a creation.

Married to traditional red sauce? Lou Malnati’s partnered with Italian beef specialist Portillo’s for a unique deep dish creation with thin-sliced Italian beef, vine-ripened plum tomatoes, Wisconsin cheese and topped with sweet peppers or hot giardiniera. A delicious signature pizza offering that’s sure to inspire countless pizzerias across the country.

Fever for the Flavor
Sweet heat is trending across the food and beverage industry as a whole, and it’s spread across the country onto pizza menus. LloydPans customer Casey’s recently launched Brisket Specialty Pizza, topped with jalapenos, red onion and ranch scattered on top of barbecue sauce. Pizza Marketplace reports that Caliente Pizza was named the official pizza provider of the Pittsburgh Penguins for the 2022-2023 season. The heat isn’t in name alone. Caliente’s menu features spicy faves like buffalo chicken pizza, Forces of Nature with roasted red peppers and the Grandma Honey, infused with fan favorite Mike’s Hot Honey.
