Pizza isn’t the only exciting thing rising in kitchens across the country. Pizza Today named its 2023 Rising Stars of the Pizza Industry, and we’re happy to report a few familiar faces on the list! We spoke to some of the LloydPans customers who made the cut about the honor and what pans they’re baking with currently.

We are honored and grateful to be among other talented pizza makers on the rise! It means a lot to be recognized for the hard work our team puts in and to share our sourdough story. Our favorite LloydPans right now is the 12x12x15-inch pan; we use it for all of our focaccias and Sicilian-style pizzas. When we expand operations, we hope to grow our pan pizza offerings.

Here at Pedroso’s we use the 12x12 Grandma Pan; it’s perfect for the size of our operation. We have a small Pizza Master oven in our pizza trailer, so that pan is the size that works best; we also utilize the same pans to make our Sicilian, and it works perfectly! I think the Rising Star nod means that we’re on the right path. I was really surprised when I got the news, because we’re a trailer in Austin, Texas, permanently parked in a parking lot next to a bar. But, we treat our product like if we were in a brick and mortar in the middle of Brooklyn. We try to be the best in all aspects.

I got my smaller 8x10 Detroit-Style Pans after Pizza Expo this year, and of course I love LloydPans for their release and easy clean up. To be included with the Rising Stars was such a surprise, really exciting and a shot in the arm to keep rising! It was a great gift for our one-year anniversary.
