Our baking trend list of 2020 continues, and the LloydPans innovation team would be remiss if we didn’t discuss the comforting, soft-baked-smell-wafting-through-the-kitchen delight that we call bread. Artisan bread was making a huge comeback before COVID, but when the pandemic hit, bread’s numbers were on the rise even more.
Los Angeles-based La Brea Bakery surveyed 367 Americans in June about their bread purchasing habits, and 38% admitted to eating more bread than prior to the coronavirus. An astounding 80% said they stocked up on foods to prepare for physical distancing, and out of that 80%, more than half said extra bread was a staple in that arsenal. More than 90% said at least one meal a week in the household includes bread, and 12% are buying from their local bakery.

Consumers who are quarantining and social distancing, along with bakeries looking to make a splash with consumers are heading to social media with visually appealing artisan breads. Bio Solutions reports that 30% of Instagram users say they’ve bought a product they discovered on the platform. Baked goods in particular are selling better with 11 hashtags, and colorful breads with bright, rainbow colors are trending.
Nutritious Positioning with Global Flavors
Just because consumers are carb loading and comfort eating doesn’t necessarily mean they’re not being health conscious. A Mintel study found that up to 47% of consumers “are willing to pay a premium for breads with natural and healthy positioning.” breads with seeds, ancient grains and pulse flours are leading the charge, along with reduced quantities of fat and sugar. However, Technavio reports that bakeries still need to factor in taste: “Bakers … need to make their recipes healthy without sacrificing taste.” It’s a balance that has been aided by new twists on globally-inspired flavors popular in bread. Yuzu, sesame, matcha and shiso, along with hibiscus, lavender and rose are starting to be blended in breads across North America, and Technavio predicts that more bakers heading into the spring will incorporate tropical fruits like mango, bergamot and passionfruit into their recipes.
